Ingredients
1 C Mixed Leaves
1/4 C Raw Broccoli, finely sliced flowerets
1/2 C Purple Cabbage, finely sliced
1/4 C Carrot, grated
5 Cherry Tomatoes, halved
30g Avocado, sliced
1/4 C Cooked Tri Color Quinoa
10g of Pepitas
Method:
Plate all ingredients as listed topping with pepitas and enough dressing to your liking.
Make the dressing by mixing 2tbl Olive Oil, 2 tsp of Apple Cider Vinegar, 1 tsp of Seeded Wholegrain Mustard and a pinch of Himalayan Pink Rock Salt in a small jar. Shake vigorously and dress salad just before eating.
